Hey everyone! I'm trying to improve my eating habits and I'm getting into meal prepping. I'm looking for some healthy and tasty meal prep ideas for the week ahead. I work long hours and often find myself reaching for unhealthy snacks, so I want to make sure I have nutritious meals ready to go. I'm not a picky eater, but I'm trying to cut back on meat and incorporate more plant-based options. Any ideas or suggestions would be greatly appreciated! Thank you in advance.

Hey there! As someone who is also trying to eat healthier and meal prep more often, I have a few suggestions for you. One of my go-to meals is baked sweet potatoes, black beans, and sautéed kale. It's super easy to prep and really filling. For breakfast, you could try making overnight oats with almond milk, chia seeds, and your favorite fruit/toppings. I like to add a homemade cilantro-lime vinaigrette to top it off- with some extra avocado to make it more filling. Another great idea is a rainbow Buddha bowl with roasted seasonal vegetables, basmati rice, mixed greens, chickpeas, and a tahini-miso dressing. For breakfast, you may also try a chia pudding made with coconut milk, chia seeds, and fresh berries as toppings.
